Better baking with real vanilla: what "aged extract" means
Vanilla is the most-used flavor in the baking aisle and, somehow, the most misunderstood. Here's what's actually in the bottle — and why we age ours for half a year before we'll sell it.
Real extract is just two things (plus patience)
True vanilla extract is made by steeping vanilla beans in alcohol. That's the entire recipe. The alcohol slowly draws hundreds of flavor compounds out of the beans — and "slowly" is the operative word. Extraction continues for months, and the flavor keeps deepening the longer beans and alcohol stay together. Ours steeps for a minimum of six months with a generous dose of beans from Madagascar and Uganda before the beans are strained out and it's bottled.
What "imitation vanilla" is
Imitation vanilla is synthesized vanillin — one flavor molecule, usually made from wood pulp byproducts or petrochemicals. Real vanilla contains vanillin too, but alongside a couple hundred other aromatic compounds that give it warmth, depth, and those floral, caramel notes. Imitation gets you one note; real extract gets you the chord.
Why two bean origins?
Madagascar beans are the classic: rich, creamy, the vanilla flavor you know. Ugandan beans run bolder — darker, with chocolatey depth. Blending the two gives our extract a rounder, fuller flavor than either alone. It's the same reason coffee roasters blend origins.
Where it makes a real difference
In anything baked hot and fast, subtle vanilla nuances can get lost. But in the places vanilla stars, quality is unmistakable:
- Whipped cream, custards, ice cream, and frostings (uncooked or gently cooked — the nuance survives)
- Sugar cookies, shortbread, and pound cake, where vanilla is the flavor
- French toast and pancake batters — a teaspoon transforms them
- Even your morning coffee or oatmeal, honestly
Keeping it
Store extract in a cool, dark cupboard, tightly capped. It doesn't spoil — if anything, it keeps mellowing. A 2-ounce bottle of the real thing outlasts and outperforms a big bottle of imitation by a mile.
